This is a really great dipping sauce for spring rolls and it also makes a fantastic marinade for grilled meats. I have found that it is best to make it a day ahead of time. Keep it in a jar with a tight fitting lid and shake periodically to help the flavors come together.

Ingredients

Finely mince the chili peppers.

I love sauces that build off a “mother” sauce — especially when there’s something hot and spicy involved!

I’d bet fish sauce would work here as well.

Oh yeah fish sauce would work out great in here also. In the summer at the Oshkosh farmers market one of the egg roll vendors has this wicked good hot sauce that is pretty much just hot peppers and fish sauce, its sooooo good!
