Spicy Mango and Plantain Sauce

At first, this was going to be a dessert…but I accidentally added jalapenos to the fruit and decided to turn it into a sauce. This turned out surprisingly well! The sweetness of the mango’s & plantains with the heat of the jalapenos makes this a winner. This would be great with Grilled Tostones.
Ingredients:
- 1 Mango, cut up
- 1 very ripe Plantain, cut up
- 1 jalapeno, cut up
- 1 tablespoon Sugar
- 1 teaspoon kosher Salt
- 1 tablespoon Butter
- Cilantro
- Juice of 2 oranges
Put the of all ingredients except the cilantro & orange juice in a foil pouch. Roast on indirect heat on the grill for 30 – 40 minutes. Add the contents of your foil pouch along with the cilantro & orange juice to a food processor and blend until smooth. Sauce will be thick like guacamole.

This sauce was served with Caribbean tacos.

Andy, this is in response to your question on my blog about the sugar cake.
Ingredients
4 cups freshly grated coconut
3 cups sugar (granualted or brown) I used brown
1 1/2 tbsp freshly grated ginger
1 cup water
Method
-Combine sugar and water in a pot and bring to a boil
-Let boil until syrup spins a thread
-Add coconut and ginger and cook until mixture thickens and leaves the sides of the pot easily, stirring constantly
-Remove from heat and drop mixture by a tablespoon (or more if you like) on to a lightly greased cookie tray (preferably with oil)
-Let cool completely until hardened.

How about a habanero in there instead of the jalapeno?
You know, Jean Anthelme Brillat-Savarin proclaimed that “the discovery of a new dish does more for human happiness than the discovery of a star.” This is a new dish for me.
Besides, I like jalapeño very much.
John, we have been going crazy with mango’s lately. As a matter of fact , I will be posting a mango and habanero salsa next week. I think the two go great together and for sure you could add it to this sauce instead of the jalapeño.
There is no such thing as a mistake in the kitchen when it comes out wonderfully like this sauce. Kudos!!!
