		<description>Andy, this is in response to your question on my blog about the sugar cake.

Ingredients
4 cups freshly grated coconut
3 cups sugar (granualted or brown) I used brown
1 1/2 tbsp freshly grated ginger
1 cup water

Method
-Combine sugar and water in a pot and bring to a boil
-Let boil until syrup spins a thread
-Add coconut and ginger and cook until mixture thickens and leaves the sides of the pot easily, stirring constantly
-Remove from heat and drop mixture by a tablespoon (or more if you like) on to a lightly greased cookie tray (preferably with oil)
-Let cool completely until hardened.
